A creamy, cheesy tomato pasta recipe that comes together in just 20 minutes with pantry staples. Perfect for busy weeknights or cozy comfort food cravings.

Ingredients

  • 12 oz pasta (penne, rigatoni, or fusilli)
  • 2 tbsp olive oil or butter
  • 3 garlic cloves, minced
  • 3 tbsp tomato paste
  • ¾ cup heavy cream or half-and-half
  • ½ cup reserved pasta water
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Red pepper flakes (optional)
  • Fresh basil or parsley (for garnish)

Instructions

  1. Cook pasta until al dente. Reserve 1 cup pasta water, then drain.
  2. In a skillet, sauté garlic in olive oil over medium heat for 1 minute.
  3. Stir in tomato paste and cook for 2–3 minutes until deep red.
  4. Add cream and pasta water. Whisk until smooth. Season with salt, pepper, and chili flakes.
  5. Toss in pasta and Parmesan. Simmer 1–2 minutes until creamy.
  6. Garnish with fresh herbs and serve hot.
