A quick and spicy noodle dish made with creamy peanut butter, chili oil, and soy sauce. Ready in just 5 minutes—perfect for busy days or late-night cravings.
6 oz thick noodles (udon, ramen, or rice noodles)
2 tbsp creamy peanut butter
1 tbsp soy sauce
1–2 tsp chili oil (to taste)
1 tsp maple syrup or brown sugar
1 tsp rice vinegar or lime juice
1–2 tbsp hot water (to thin)
Optional: ¼ tsp garlic powder or ½ clove garlic, minced
Toppings: chopped cilantro, scallions, peanuts, sesame seeds
Cook or reheat noodles according to package directions.
In a bowl, whisk together peanut butter, soy sauce, chili oil, sweetener, vinegar, and garlic (if using). Add hot water until smooth and pourable.
Add hot noodles to the bowl. Toss until evenly coated.
Top with herbs, chopped peanuts, and extra chili oil. Serve warm or chilled.
Add tofu, edamame, or shredded chicken for protein.
