8 oz noodles (rice, ramen, or spaghetti)
¼ cup peanut butter
2 tbsp soy sauce
1 tbsp rice vinegar or lime juice
1 tbsp chili garlic sauce
1 tsp sesame oil
1–2 tsp honey or maple syrup
1–2 tbsp hot water (to thin sauce)
Optional: scallions, peanuts, veggies, sesame seeds
Cook noodles as directed; drain and rinse with cool water.
Whisk together all sauce ingredients until smooth.
Toss noodles in sauce until well coated.
