1.5 lbs chicken thighs or breasts
1 cup buttermilk
1–2 tbsp hot sauce
3 cups cornflakes, crushed
½ cup panko breadcrumbs (optional)
½ tsp salt
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
¼ tsp cayenne
Olive oil spray
Hot Honey:
½ cup honey
1–2 tbsp hot sauce
1 tbsp butter
Instructions
Marinate chicken in buttermilk and hot sauce (30 mins–overnight).
Mix cornflakes, panko, and spices.
Preheat oven to 425°F. Coat chicken in crumbs. Place on wire rack.
Spray with oil. Bake 22–25 mins until crispy and cooked through.
