This easy Chicken Fajita Casserole brings sizzling Tex-Mex flavor to your dinner table in one cheesy, comforting bake. Loaded with peppers, onions, and juicy chicken—perfect for busy nights or make-ahead meals.
1 lb boneless skinless chicken breast, cubed
3 bell peppers (any color), sliced
1 large onion, sliced
2 tbsp olive oil
2 tbsp fajita seasoning
1 (10 oz) can diced tomatoes with green chilies
1 ½ cups shredded Mexican blend cheese
Salt and pepper to taste
Optional: jalapeños, black beans, sour cream
Preheat oven to 375°F.
Sauté chicken in 1 tbsp olive oil until cooked through. Remove.
Sauté peppers and onions in remaining oil.
Return chicken to skillet. Stir in seasoning and tomatoes.
Transfer to baking dish and top with cheese.
Bake uncovered for 20–25 minutes.
Garnish and serve hot.
