This easy Chicken Fajita Casserole brings sizzling Tex-Mex flavor to your dinner table in one cheesy, comforting bake. Loaded with peppers, onions, and juicy chicken—perfect for busy nights or make-ahead meals.

Ingredients

  • 1 lb boneless skinless chicken breast, cubed

  • 3 bell peppers (any color), sliced

  • 1 large onion, sliced

  • 2 tbsp olive oil

  • 2 tbsp fajita seasoning

  • 1 (10 oz) can diced tomatoes with green chilies

  • 1 ½ cups shredded Mexican blend cheese

  • Salt and pepper to taste

  • Optional: jalapeños, black beans, sour cream

Instructions

  • Preheat oven to 375°F.

  • Sauté chicken in 1 tbsp olive oil until cooked through. Remove.

  • Sauté peppers and onions in remaining oil.

  • Return chicken to skillet. Stir in seasoning and tomatoes.

  • Transfer to baking dish and top with cheese.

  • Bake uncovered for 20–25 minutes.

  • Garnish and serve hot.
