A fresh Best Cucumber Pasta Salad made with tender pasta, crisp cucumbers, herbs, and a creamy tangy dressing perfect for warm days and gatherings.

Ingredients

12 ounces rotini or penne pasta
2 cups cucumber, thinly sliced or diced
1 cup cherry tomatoes, halved (optional)
1/4 cup red onion, thinly sliced
1/2 cup mayonnaise
1/4 cup sour cream or plain Greek yogurt
1 tablespoon lemon juice
1 teaspoon garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh dill, chopped
1 tablespoon olive oil
1/4 cup feta cheese, crumbled (optional)

Instructions

  1. Cook pasta in salted boiling water until al dente, then drain and rinse under cold water.
  2. In a bowl, mix mayonnaise, sour cream, lemon juice, garlic, salt, and pepper until smooth.
  3. Add cooled pasta and toss to coat evenly.
  4. Add cucumber, onion, and tomatoes if using.
  5. Fold in dill, olive oil, and feta cheese if using.
  6. Adjust seasoning to taste.
  7. Chill before serving and stir again prior to serving.

Notes

Store in an airtight container in the refrigerator. If the salad becomes watery after chilling, drain excess liquid and mix in a small amount of dressing before serving to restore consistency.
