A creamy Best Macaroni Salad made with tender pasta, fresh vegetables, eggs, and a tangy dressing for a classic chilled side dish.

2 cups elbow macaroni, uncooked
1 cup mayonnaise
1 tablespoon apple cider vinegar
1 teaspoon yellow mustard
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup celery, finely diced
1/2 cup red bell pepper, diced
1/3 cup red onion, finely chopped
2 hard-boiled eggs, chopped
1/4 cup sweet pickle relish
2 tablespoons fresh parsley, chopped
1/4 teaspoon paprika (optional)

Instructions

  1. Cook macaroni in salted boiling water until al dente, then drain and rinse under cold water.
  2. In a large bowl, mix mayonnaise, vinegar, mustard, sugar, salt, and black pepper until smooth.
  3. Add cooled macaroni and toss to coat evenly.
  4. Add celery, bell pepper, onion, eggs, and relish.
  5. Fold gently to combine all ingredients.
  6. Stir in parsley and paprika if using.
  7. Chill before serving and stir again prior to serving.

Notes

Store in an airtight container in the refrigerator. If the salad thickens after chilling, mix in a small amount of mayonnaise or milk to restore consistency.
