Hearty black beans and rice cooked with smoky sausage, vegetables, and warm spices for a comforting one-pan meal.

Ingredients

1 cup long-grain rice
2 cups chicken broth
1 can black beans, drained
12 oz smoked sausage, sliced
1 onion, diced
1 bell pepper, diced
3 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon cumin
Salt and pepper to taste
2 tablespoons parsley

Instructions

  1. Brown sausage in a skillet with oil.
  2. Add onion and bell pepper; cook until soft.
  3. Stir in garlic and spices.
  4. Add rice and mix well.
  5. Pour in broth and bring to a simmer.
  6. Add beans and sausage back in.
  7. Cover and cook on low until rice is tender.
  8. Fluff and garnish with parsley.

Notes

Adjust spice level using chili flakes or hot sauce.
Add extra broth if rice absorbs liquid too quickly.
Best served warm straight from the skillet.
