A refreshing salad made with broccoli, spinach, blueberries, and creamy lemon yogurt dressing.

Ingredients

3 cups chopped broccoli florets
3 cups baby spinach
1 cup fresh blueberries
1/4 cup sliced red onion
1/3 cup sunflower seeds
1/3 cup Greek yogurt
1 tablespoon olive oil
2 tablespoons lemon juice
1 tablespoon honey
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

  1. Chop broccoli into small pieces and place in a large bowl.
  2. Add spinach, blueberries, onion, and sunflower seeds.
  3. Whisk yogurt, olive oil, lemon juice, honey, mustard, salt, and pepper to make dressing.
  4. Pour dressing over the salad and toss gently.
  5. Serve immediately or chill briefly before serving.
