Blueberry Lavender Vegan Madeleines are light, dairy-free shell-shaped cakes infused with floral lavender and fresh blueberries for an elegant plant-based treat.

Ingredients

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 cup granulated sugar
1 cup unsweetened almond milk
1/3 cup neutral oil
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
1 tablespoon dried culinary lavender, finely crushed
1 teaspoon lemon zest
3/4 cup fresh blueberries
1 teaspoon flour for tossing blueberries
Optional powdered sugar for dusting

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and grease madeleine pan.
  2. Infuse almond milk with lavender for 5 minutes.
  3. Whisk flour, baking powder, sugar, and lemon zest.
  4. Add applesauce, oil, vanilla, and infused milk.
  5. Fold in floured blueberries.
  6. Fill molds three-quarters full.
  7. Bake 12 to 15 minutes until golden.
  8. Cool briefly before removing from pan.
  9. Dust with powdered sugar if desired.

Notes

Use culinary-grade lavender only.
Do not overmix batter.
Store airtight up to three days.
