A cozy, noodle-filled twist on classic French onion soup — rich caramelized onions, savory beef broth, pasta, and melty cheese in one comforting bowl.

Ingredients

  • 45 yellow onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp fresh thyme
  • 1/3 cup dry white wine or sherry (optional)
  • 6 cups low-sodium beef broth
  • 1 bay leaf
  • 8 oz small pasta (ditalini, shells, or elbows)
  • 1 tbsp balsamic vinegar (optional)
  • Salt and pepper to taste
  • 1 1/2 cups shredded Gruyère or Swiss cheese
  • Toasted baguette slices or croutons
  • Optional: chopped parsley for garnish

Instructions

  1. Caramelize onions in butter and oil for 30–40 minutes. Add garlic and thyme.
  2. Deglaze with wine if using. Stir in broth, bay leaf, and vinegar. Simmer 15–20 minutes.
  3. Cook pasta separately until al dente. Drain and set aside.
  4. Remove bay leaf. Add pasta to bowls, then ladle soup over.
  5. Top with toast/croutons and shredded cheese. Broil until melted and bubbly.
  6. Garnish and serve hot.

Notes

  • Keep pasta and soup separate for storage.
  • Add sautéed mushrooms or spinach to increase veggies.
  • Make vegetarian with mushroom broth and extra onions.
