A crisp, flavorful salad featuring broccoli, apples, nuts, and dried cranberries tossed in a light creamy dressing. Perfect for lunches or as a side dish.

Ingredients

4 cups fresh broccoli florets
1 large apple, diced
1/4 cup shredded carrot (optional)
1/4 cup red onion, finely chopped
1/4 cup toasted almonds or sunflower seeds
1/4 cup dried cranberries
1/2 cup Greek yogurt
1/4 cup mayonnaise
2 tablespoons lemon juice
1 tablespoon honey or maple syrup
1/4 teaspoon salt
1/4 teaspoon black pepper

Instructions

  1. Wash and cut broccoli into bite-sized florets. Blanch if desired.
  2. Dice apple and toss with lemon juice.
  3. Toast nuts in a dry skillet until lightly golden.
  4. Whisk together Greek yogurt, mayonnaise, honey, lemon juice, salt, and pepper.
  5. Combine broccoli, apple, carrot, red onion, nuts, and dried cranberries in a large bowl.
  6. Pour dressing over salad and toss gently.
  7. Refrigerate 20–30 minutes before serving.
