Ingredients

12 oz spaghetti
1 lb chicken breast or thighs, sliced
1 tbsp Cajun seasoning
1 tbsp olive oil
1 tbsp butter
½ small onion, diced
1 bell pepper, diced
2 cloves garlic, minced
1 cup heavy cream
½ cup chicken broth or pasta water
½ cup grated Parmesan cheese
Salt & black pepper to taste
Fresh parsley or green onion (optional)
Instructions
Cook spaghetti in salted water until al dente. Reserve ½ cup pasta water and drain.
Toss chicken with Cajun seasoning. Sear in oil until browned and cooked through. Set aside.
In same pan, add butter, onion, bell pepper, and garlic. Sauté 3–4 minutes.
Add cream, broth, and Parmesan. Stir until smooth and thickened.
Return chicken to pan. Add spaghetti and toss to coat.
Adjust seasoning. Garnish and serve hot.
Notes
Use half-and-half or milk + cream cheese for a lighter sauce
Add spinach or mushrooms for more veggies
Use shrimp or sausage instead of chicken for variety
