Crispy cups filled with creamy guacamole and topped with Cajun-spiced shrimp for a bold and fresh appetizer.

Ingredients

1 pound shrimp, peeled and deveined
1 tablespoon olive oil
1 1/2 teaspoons Cajun seasoning
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon black pepper
2 avocados
1 lime, juiced
1/4 cup red onion, chopped
1/2 cup tomatoes, diced
2 tablespoons cilantro
1 clove garlic
1/2 teaspoon salt
12 tortilla cups

Instructions

  1. Toss shrimp with oil and seasonings.
  2. Cook shrimp in a hot skillet for 3–5 minutes until opaque.
  3. Mash avocados and mix with lime juice, garlic, and salt.
  4. Fold in onion, tomatoes, and cilantro.
  5. Fill cups with guacamole.
  6. Top each with shrimp and serve immediately.

Notes

Do not overcook shrimp. Assemble just before serving for best texture.
