Ingredients

  • 1012 oz short pasta (shells, rigatoni, penne)
  • 2 tbsp olive oil
  • 1 small shallot, finely diced
  • 2 garlic cloves, minced
  • 1/4 cup tomato paste
  • 1 tsp red pepper flakes (adjust to taste)
  • 1/2 cup heavy cream
  • 1/3 cup grated Parmesan cheese
  • 1 tbsp butter
  • Salt and black pepper to taste
  • 1/41/2 cup reserved pasta water
  • Fresh basil (optional)

Instructions

  1. Cook pasta until al dente. Reserve pasta water, then drain.
  2. In a skillet, sauté shallot and garlic in olive oil until soft.
  3. Add tomato paste and cook 2–3 minutes until darkened.
  4. Stir in red pepper flakes and cream. Simmer until smooth.
  5. Add reserved pasta water and butter. Stir until glossy.
  6. Turn off heat and stir in Parmesan.
  7. Add pasta and toss to coat. Season with salt and pepper.
  8. Serve hot with extra Parmesan and basil.

Notes

Use freshly grated cheese and al dente pasta for best results. Add protein or vegetables to customize.
