1½–2 lbs chicken thighs or breasts
1 lb baby potatoes, halved
3 large carrots, peeled and sliced
1 cup green beans, trimmed (add near end)
4–6 cloves garlic, minced
1/2 cup unsalted butter, melted
1 tbsp Italian seasoning
1 tsp salt
1/2 tsp black pepper
Juice of 1/2 lemon (optional)
Chopped fresh parsley, for garnish
Instructions
Place potatoes and carrots in bottom of slow cooker.
Season chicken with salt, pepper, and Italian seasoning. Add on top.
Sprinkle garlic over everything.
Pour melted butter (mixed with lemon juice, if using) over chicken and vegetables.
Cover and cook on low for 6–7 hours or high for 3–4 hours.
