A creamy, flavorful pasta dish featuring seared chicken, sun-dried tomatoes, garlic, and Parmesan in a luscious cream sauce. Perfect for date nights or indulgent weeknight dinners.

Ingredients

  • 2 boneless, skinless chicken breasts or 4 thighs
  • Salt, pepper, garlic powder (to season chicken)
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • ½ tsp red pepper flakes
  • ⅓ cup sun-dried tomatoes (oil-packed), chopped
  • ¾ cup chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan
  • 8 oz pasta (penne, fettuccine, or rigatoni)
  • Fresh basil or parsley, chopped

Instructions

  1. Cook pasta until al dente. Reserve ½ cup pasta water, then drain.
  2. Season and sear chicken in olive oil until golden and cooked through. Set aside.
  3. In the same pan, sauté garlic, red pepper flakes, and sun-dried tomatoes in butter for 1–2 minutes.
  4. Add chicken broth and cream. Simmer 3–5 minutes, then stir in Parmesan and season to taste.
  5. Slice chicken and return to the pan with pasta. Toss everything together. Use pasta water to adjust sauce if needed.
  6. Garnish with fresh herbs and extra cheese. Serve hot.

Notes

Add spinach or mushrooms for variety. Use half-and-half for a lighter sauce. Great as leftovers with a splash of broth.
