1 1/2 pounds boneless skinless chicken thighs
1 cup plain yogurt
2 tablespoons olive oil
1 lemon, juiced
3 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon ground coriander
1/2 teaspoon turmeric
Pinch of cinnamon
1 teaspoon salt
1/2 teaspoon black pepper
4 large pita breads or flatbreads
1 cup shredded lettuce
1 cup sliced tomatoes
1 cup sliced cucumber
1/2 cup thinly sliced red onion
For Garlic Sauce:
1/2 cup mayonnaise or Greek yogurt
2 garlic cloves, minced
1 tablespoon lemon juice
1 tablespoon olive oil
Pinch of salt
1. Mix yogurt, olive oil, lemon juice, garlic, and spices.
2. Marinate chicken at least 1 hour.
3. Cook chicken in skillet or oven until internal temperature reaches 165°F.
4. Rest and slice thinly.
5. Mix garlic sauce ingredients.
6. Warm pita, spread sauce, add chicken and vegetables.
7. Roll tightly and serve warm.
