Juicy grilled chicken skewers glazed in a sweet-savory soy sauce blend, perfect for a family dinner. A quick, flavorful Japanese-inspired meal in 30 minutes.

Ingredients

1.5 lbs boneless chicken thighs, cut into chunks
½ cup soy sauce
½ cup mirin
¼ cup sake
2 tbsp brown sugar
1 garlic clove, grated (optional)
1 tsp grated ginger (optional)
46 scallions, cut into 1-inch pieces (optional)
8 bamboo skewers, soaked in water
1 tbsp oil (if using grill pan or skillet)

Instructions

  1. Soak bamboo skewers in water for 30 minutes.
  2. Combine soy sauce, mirin, sake, brown sugar, garlic, and ginger in a saucepan. Simmer 10–12 minutes until slightly thick.
  3. Thread chicken and scallions onto skewers.
  4. Grill or broil skewers 3–4 minutes per side, basting with sauce until cooked and lightly charred.
  5. Boil extra sauce and drizzle or serve on the side.

Notes

Use tamari for gluten-free. Swap mirin and sake with white wine and a pinch of sugar if needed. Serve with rice and veggies for a full meal.
