3 medium zucchini, sliced into rounds
1 cup cherry tomatoes or 1/2 cup diced tomatoes, drained
1/2 onion, chopped
2 cloves garlic, minced
3/4 cup cottage cheese or Greek yogurt (optional)
1 tsp Italian seasoning
1 cup shredded mozzarella (part-skim or full-fat)
1 tbsp olive oil
Salt and pepper, to taste
Fresh parsley or basil, for garnish (optional)
