Juicy, tender chicken thighs marinated in a sweet and savory hoisin-based sauce, then grilled or roasted until sticky and caramelized. A bold, easy take on classic Char Siu.

Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • ¼ cup hoisin sauce
  • 2 tbsp soy sauce (low sodium)
  • 1 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or Shaoxing wine
  • 1 tsp Chinese five spice powder
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • ½ tsp sesame oil
  • (Optional) 2–3 drops red food coloring

Instructions

  1. In a bowl, mix hoisin, soy sauce, honey, vinegar, five spice, garlic, ginger, sesame oil, and coloring.
  2. Add chicken and toss to coat. Marinate 1 hour or overnight.
  3. Cook chicken by roasting at 400°F for 30–35 minutes, grilling 5–6 minutes per side, or pan-searing. Baste with marinade during final minutes.
  4. Broil or sear briefly for sticky glaze. Let rest, slice, and serve.

Notes

  • Serve over rice or in bao buns
  • Add chili paste for heat
