This Christmas Gingerbread Tart features a buttery spiced crust and a rich molasses custard filling, packed with classic holiday spices. A festive showstopper perfect for the season.

Ingredients

Crust:

  • 1 1/4 cups flour
  • 1/4 cup brown sugar
  • 1/2 cup cold butter
  • 1 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 egg yolk
  • 1 tbsp molasses
  • 12 tbsp cold water
  • Pinch of salt

Filling:

  • 2/3 cup dark brown sugar
  • 1/4 cup molasses
  • 2 eggs
  • 3/4 cup heavy cream
  • 1 1/2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 tsp cloves
  • 1/8 tsp nutmeg
  • 1 tsp vanilla
  • Pinch of salt

Instructions

  1. Combine crust ingredients and chill dough for 30 minutes.
  2. Roll into tart pan, prick base, chill again. Blind bake at 375°F for 15 mins, then 5 mins uncovered.
  3. Whisk filling ingredients until smooth.
  4. Pour into crust and bake at 350°F for 30–35 mins.
  5. Cool completely. Decorate with whipped cream, sugared cranberries, or powdered sugar.

Notes

  • Make a day ahead for best texture.
  • Use mini tart pans for individual servings.
  • Add a cream cheese swirl or chocolate for a twist.
