Cilantro Lime Pasta Salad features tender pasta tossed with crisp vegetables, fresh cilantro, and a zesty lime dressing for a refreshing and flavorful dish.

Ingredients

12 ounces short pasta
1 red bell pepper, diced
1 cup cherry tomatoes, halved
1 cup corn kernels
1/4 cup finely chopped red onion
1/2 cup chopped fresh cilantro

For the dressing:
1/4 cup olive oil
3 tablespoons fresh lime juice
1 teaspoon lime zest
2 tablespoons plain Greek yogurt or mayonnaise
1 teaspoon honey
1/2 teaspoon garlic powder
Salt and freshly ground black pepper to taste

Instructions

1. Cook pasta until al dente, drain, and cool.
2. Combine pasta, bell pepper, tomatoes, corn, onion, and cilantro.
3. Whisk dressing ingredients until smooth.
4. Toss dressing with pasta mixture.
5. Chill 20 to 30 minutes before serving.
6. Garnish with additional cilantro if desired.
