Cilantro Lime Steak Bowls are fresh, zesty rice bowls topped with juicy marinated steak, vibrant veggies, and a creamy cilantro lime sauce — perfect for a nourishing, flavorful meal.

Ingredients

For the Steak Marinade:

  • 1.5 lbs flank or skirt steak
  • 1/4 cup olive oil
  • Juice of 2 limes
  • 1/3 cup chopped cilantro
  • 3 garlic cloves, minced
  • 1/2 tsp cumin
  • Salt and pepper

For the Bowls:

  • 2 cups cooked white rice
  • 1 avocado, sliced
  • 1 cup corn (fresh, canned, or grilled)
  • 1 cup black beans
  • 1/2 cup cherry tomatoes, halved
  • Optional: pickled red onions, jalapeños, shredded lettuce

Cilantro Lime Sauce:

  • 1/2 cup Greek yogurt or sour cream
  • Juice of 1 lime
  • 1/4 cup fresh cilantro
  • 1 garlic clove
  • 1 tbsp olive oil
  • Pinch of salt
  • Water to thin

Instructions

  1. Marinate steak in olive oil, lime juice, cilantro, garlic, cumin, salt, and pepper for at least 20 minutes.
  2. Cook steak over high heat for 3–4 minutes per side. Let rest, then slice thinly against the grain.
  3. Prepare cilantro lime rice and toppings.
  4. Blend sauce ingredients until smooth.
  5. Assemble bowls with rice, steak, and toppings. Drizzle with sauce.

Notes

Use brown rice or cauliflower rice as alternatives. Make vegetarian by swapping steak for grilled veggies or tofu.
