Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper.
- Cream butter and 1/2 cup powdered sugar until light and fluffy.
- Beat in vanilla extract until combined.
- Whisk together flour and salt; gradually mix into butter mixture.
- Fold in toasted pecans.
- Scoop tablespoon-sized dough portions and roll into balls.
- Bake 12–15 minutes until lightly golden on bottoms.
- Roll warm cookies in powdered sugar; cool on wire rack and roll again.
- Store in airtight container up to 5 days.
Notes
