Classic chicken pot pie flavors in pasta form! This creamy one-pot meal is filled with tender chicken, sweet vegetables, and a rich sauce — ready in under 30 minutes.

Ingredients

  • 12 oz short pasta (shells, bowties, rotini)
  • 2 cups cooked shredded chicken
  • 1½ cups frozen mixed vegetables
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 cup whole milk or half-and-half
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Optional: ¼ cup grated Parmesan, parsley

Instructions

  1. Cook pasta until al dente. Drain and set aside.
  2. In the same pot, sauté onion in butter until soft. Add garlic and cook 30 seconds.
  3. Stir in flour to form a roux. Whisk in broth and milk until smooth.
  4. Add thyme, salt, pepper, and simmer 5–6 minutes to thicken.
  5. Stir in chicken and vegetables. Simmer 3–4 minutes.
  6. Add pasta and stir to coat. Optional: mix in Parmesan.
  7. Serve warm with parsley garnish.

Notes

Use turkey or mushrooms as a variation. Add biscuit topping and bake for a casserole version. Gluten-free and dairy-free options included above.
