A rich, creamy twist on traditional Bolognese—featuring slow-simmered meat sauce finished with cream and Parmesan, served over fettuccine.

Ingredients

  • 12 oz fettuccine
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • 2 garlic cloves, minced
  • 1 lb ground beef or beef/pork mix
  • Salt and pepper to taste
  • 2 tbsp tomato paste
  • ½ cup dry white or red wine
  • 1½ cups crushed tomatoes or passata
  • ½ cup beef broth
  • ½ cup heavy cream
  • ¼ cup Parmesan cheese, grated
  • Fresh basil or parsley, for garnish

Instructions

  1. Cook pasta until al dente. Reserve ½ cup pasta water.
  2. In a skillet, heat olive oil. Sauté onion, carrot, and celery for 5–7 mins.
  3. Add garlic and cook 1 min. Brown the meat; season with salt and pepper.
  4. Deglaze with wine. Simmer 2 mins.
  5. Stir in tomato paste, tomatoes, and broth. Simmer 25–30 mins.
  6. Add cream and Parmesan. Simmer 5 more mins.
  7. Toss cooked pasta into sauce. Use pasta water to adjust consistency.
  8. Serve hot with extra Parmesan and herbs.

Notes

  • Use freshly grated Parmesan for best melt.
  • Sauce can be made ahead and frozen.
  • Adjust richness by swapping cream for milk or yogurt.
