Ingredients

12 oz short pasta (penne, rotini, etc.)
1 tbsp olive oil
1 onion, diced
3 garlic cloves, minced
1 tbsp tomato paste
1 can (14 oz) crushed tomatoes
3 cups vegetable broth
½ cup heavy cream or plant cream
¼ cup grated Parmesan or vegan cheese
Salt, pepper, and Italian seasoning to taste
Fresh basil or parsley, for garnish
Instructions
In a large skillet, sauté onion in olive oil until soft. Add garlic; cook 30 seconds.
Stir in tomato paste. Add tomatoes, broth, seasoning. Bring to a simmer.
