Creamy Cabbage Potato Soup is a smooth, comforting blend of tender potatoes and sweet cabbage simmered in a rich, rustic broth.

Ingredients

2 pounds Yukon Gold or Russet potatoes peeled and diced
3 cups green cabbage thinly sliced
1 small yellow onion chopped or 1 leek sliced
2 cloves garlic minced
3 tablespoons unsalted butter
4 to 5 cups vegetable broth
1/2 cup heavy cream or whole milk warmed
Salt to taste
Black pepper to taste
Optional chopped parsley

Instructions

  1. Melt butter and sauté onion until soft.
  2. Add garlic and cook briefly.
  3. Stir in cabbage and cook 5 minutes.
  4. Add potatoes and broth and simmer 20 to 25 minutes.
  5. Blend until smooth.
  6. Stir in cream and season.
  7. Serve warm with garnish.

Notes

Blend partially for a chunkier texture. Add broth when reheating if soup thickens.
