A creamy, cheesy ground beef and rice casserole baked to bubbling perfection. Hearty, comforting, and perfect for weeknight dinners or make-ahead meals.

Ingredients

1 lb ground beef
2 cups cooked white rice
1 can (10.5 oz) cream of mushroom soup
½ cup sour cream
1 small onion, diced
2 garlic cloves, minced
1 tsp oil or butter
1 tsp salt
½ tsp black pepper
½ tsp paprika
12 cups shredded cheddar cheese
½ cup frozen peas or corn (optional)

Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch baking dish.
  2. Cook ground beef in a skillet until browned. Drain.
  3. Add onion and sauté 3–4 minutes. Add garlic and cook 1 minute more.
  4. In a large bowl, mix beef mixture with rice, soup, sour cream, 1 cup cheese, and seasonings. Add peas or corn if using.
  5. Spread in baking dish and top with remaining cheese.
  6. Cover with foil and bake 20 minutes. Uncover and bake 10–15 minutes more.
  7. Let rest 5 minutes before serving.

Notes

Use Greek yogurt instead of sour cream for added protein. Make ahead and refrigerate for easy weeknight baking.
