Cozy Colcannon Soup with Green Onions

Irish Colcannon Soup is a creamy potato and cabbage soup inspired by the traditional Irish colcannon dish.

Ingredients

2 pounds potatoes peeled and diced
3 cups green cabbage thinly sliced
1 leek or 1 small onion chopped
2 cloves garlic minced
3 tablespoons unsalted butter
4 cups vegetable broth
1/2 cup whole milk or light cream warmed
3 scallions thinly sliced
Salt to taste
Black pepper to taste
Optional fresh parsley

Instructions

  1. Melt butter and sauté leek or onion until soft.
  2. Add garlic and cook briefly.
  3. Stir in cabbage and cook until softened.
  4. Add potatoes and broth and simmer 20 minutes.
  5. Blend until smooth.
  6. Stir in milk and season.
  7. Garnish with scallions and serve warm.

Notes

Blend partially for a chunkier texture. Add broth when reheating if soup thickens.
