Creamy Spinach Casserole is a baked side dish made with spinach, cream cheese, sour cream, eggs, and cheese, blended into a smooth mixture and baked until set with a lightly golden surface.

2 pounds fresh spinach or 20 ounces frozen spinach, thawed and drained
8 ounces cream cheese, softened
1 cup sour cream
1 cup shredded mozzarella cheese
2 large eggs
2 cloves garlic, minced
1/2 small onion, finely chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon ground nutmeg
2 tablespoons unsalted butter

Instructions

  1. Cook fresh spinach until wilted or drain thawed frozen spinach thoroughly.
  2. Preheat oven to 350°F and grease a baking dish.
  3. Melt butter in a skillet, cook onion until soft, then add garlic briefly.
  4. In a bowl, mix cream cheese and sour cream until smooth.
  5. Add eggs and whisk until combined.
  6. Stir in mozzarella, salt, pepper, and nutmeg.
  7. Fold in spinach along with the onion and garlic mixture.
  8. Transfer mixture into the baking dish and spread evenly.
  9. Bake for 30 to 40 minutes until set and lightly golden.
  10. Rest briefly before serving warm.

Notes

Drain spinach thoroughly to prevent excess liquid. Allow resting time after baking for better slicing.
