Creamy Cajun Chicken Pasta blends smoky, spicy flavors with a rich cream sauce for a bold and comforting one-pan dinner.
2 boneless, skinless chicken breasts
2 tablespoons Cajun seasoning
Salt & black pepper, to taste
1 tablespoon olive oil
1 tablespoon butter
8 oz pasta (fettuccine or penne)
1 red bell pepper, sliced
1 yellow bell pepper, sliced
½ onion, sliced
3 cloves garlic, minced
1 cup heavy cream
½ cup grated Parmesan cheese
Red pepper flakes (optional)
Fresh parsley, chopped
Reserved pasta water
Cook pasta until al dente. Reserve ½ cup pasta water. Drain and set aside.
Season chicken with Cajun seasoning, salt, and pepper.
Heat oil and butter in skillet. Sear chicken 4–5 minutes per side until cooked. Remove and slice.
Sauté peppers and onion for 5 minutes. Add garlic and cook 1 minute more.
Pour in cream, scraping pan. Add Parmesan and stir until thickened.
Return chicken and pasta to skillet. Toss to coat. Add pasta water if needed.
Garnish with parsley and serve hot.
Swap chicken for shrimp or sausage.
