12 ounces rotini or penne pasta
2 cups cooked chicken breast, diced
3 cups romaine lettuce, chopped
1 cup Caesar dressing
1/2 cup grated Parmesan cheese
1 cup croutons
1/2 cup cherry tomatoes, halved (optional)
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 clove garlic, minced (optional)

Instructions

  1. Cook pasta in salted boiling water until al dente, then drain and rinse under cold water.
  2. Prepare and cook chicken if needed, then cut into bite-sized pieces.
  3. In a large bowl, combine pasta and chicken with Caesar dressing and toss to coat.
  4. Add romaine lettuce, Parmesan cheese, and cherry tomatoes if using.
  5. Toss gently to combine without crushing the lettuce.
  6. Add croutons just before serving and mix lightly.
  7. Adjust seasoning and serve chilled or at room temperature.

Notes

Store in an airtight container in the refrigerator. Keep croutons separate until serving to maintain crunch. Add extra dressing if the salad becomes dry after chilling.
