A crisp broccoli salad with cucumber, avocado, and creamy lemon yogurt dressing.

Ingredients

4 cups broccoli florets
1 large cucumber, diced
1 avocado, diced
1/4 cup sliced red onion
1/4 cup chopped parsley
1 avocado
1/3 cup Greek yogurt
2 tablespoons lemon juice
1 tablespoon olive oil
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

  1. Chop broccoli into small pieces and place in a large bowl.
  2. Dice cucumber and avocado and add to the bowl with red onion.
  3. Blend avocado, yogurt, lemon juice, olive oil, garlic, salt, and pepper to make dressing.
  4. Add water gradually until the dressing is smooth and creamy.
  5. Pour dressing over the salad and toss gently.
  6. Stir in chopped herbs and serve.

Notes

Add sunflower seeds or feta cheese for extra texture and flavor.
