Ingredients

3 medium cucumbers, thinly sliced
6 slices bacon
1 cup shredded cheddar cheese
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon white vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons fresh dill, chopped
1 tablespoon chives, finely chopped

Instructions

  1. Slice cucumbers thinly and place in a large bowl. Sprinkle lightly with salt and let sit 10 minutes.
  2. Cook bacon until crisp, drain, and crumble.
  3. Whisk together mayonnaise, sour cream, vinegar, sugar, salt, and pepper.
  4. Toss cucumbers with dressing gently.
  5. Add cheese and crumbled bacon, fold to combine.
  6. Stir in dill and chives. Chill 20–30 minutes before serving.

Notes

For extra crunch, add radishes or red onions. Use Greek yogurt for a lighter dressing. Bacon can be substituted with turkey bacon.
