8 oz pasta (penne, rotini, or orzo)
6 oz block feta, crumbled
Zest of 1 lemon
Juice of ½–1 lemon
2 tbsp extra virgin olive oil
1 small garlic clove, minced or roasted (optional)
Salt and pepper to taste
½ tsp chili flakes (optional)
½–¾ cup reserved pasta water
Optional garnish: chopped parsley, dill, or basil
Cook pasta in salted water until al dente. Reserve ¾ cup pasta water, then drain.
In a large bowl, combine feta, olive oil, lemon zest, lemon juice, garlic, and seasonings.
Add hot pasta and ½ cup pasta water to the bowl. Stir until creamy.
Add more water for a looser sauce, or more lemon for brightness.
Serve immediately, garnished with herbs or add-ins if desired.
Use gluten-free or whole grain pasta if needed.
Stir in chickpeas, spinach, or roasted veggies for a fuller meal.
