A classic creamy macaroni salad made with tender pasta, fresh vegetables, eggs, and a tangy mayonnaise-based dressing.

Ingredients

2 cups elbow macaroni, uncooked
1 cup mayonnaise
1 tablespoon apple cider vinegar
1 teaspoon yellow mustard
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup celery, finely diced
1/2 cup red bell pepper, diced
1/3 cup red onion, finely chopped
2 hard-boiled eggs, chopped
1/4 cup sweet pickle relish
2 tablespoons fresh parsley, chopped
1/4 teaspoon paprika (optional)

Instructions

  1. Cook macaroni in salted boiling water until al dente, then drain and rinse under cold water.
  2. In a large bowl, mix mayonnaise, vinegar, mustard, sugar, salt, and pepper until smooth.
  3. Add cooled macaroni and toss to coat evenly.
  4. Add celery, bell pepper, onion, eggs, and relish. Mix gently.
  5. Stir in parsley and paprika if using.
  6. Adjust seasoning as needed.
  7. Refrigerate for at least one hour before serving and stir again before serving.

Notes

Chill before serving for best flavor. Add a small amount of dressing before serving if the salad appears dry after resting.
