A creamy Soslu Makarna Salatası Tarifi made with pasta, vegetables, and a smooth yogurt-mayonnaise dressing, perfect as a side dish or light meal.

Ingredients

2 cups short pasta (penne, fusilli, or elbow macaroni)
1/2 cup mayonnaise
1/2 cup plain yogurt
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon mustard
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup corn kernels
1/2 cup pickles, finely chopped
1/2 cup carrot, grated
1/2 cup red bell pepper, diced
1/4 cup red onion, finely chopped
2 tablespoons fresh parsley, chopped
2 hard-boiled eggs, chopped (optional)

Instructions

  1. Cook pasta in salted boiling water until firm and tender, then drain and cool under water.
  2. In a bowl, mix mayonnaise, yogurt, olive oil, lemon juice, mustard, salt, and black pepper until smooth.
  3. Add cooled pasta and mix to coat evenly.
  4. Add corn, pickles, carrot, bell pepper, and onion.
  5. Fold in eggs if using and mix gently.
  6. Add parsley and combine lightly.
  7. Chill in the refrigerator before serving and stir again before serving.

Notes

Store in an airtight container in the refrigerator. If the salad thickens after chilling, add a small amount of yogurt or olive oil before serving to adjust texture.
