Creamy ROTEL Pasta Dinner Recipe

A bold, cheesy one-pot pasta loaded with ROTEL tomatoes, taco-seasoned meat, and creamy cheese. Ready in 30 minutes and perfect for busy nights or casual get-togethers.

Ingredients

  • 12 oz pasta (penne, rotini, or elbows)
  • 1 lb ground beef or turkey
  • 1 can ROTEL tomatoes with green chilies (10 oz, undrained)
  • 1½ cups shredded cheddar cheese
  • 4 oz cream cheese
  • 1 small onion, diced (optional)
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 2 cups chicken or beef broth
  • Salt and pepper, to taste
  • Optional toppings: cilantro, jalapeños, sour cream, crushed chips

Instructions

  1. In a large skillet, brown ground meat over medium heat. Drain excess fat.
  2. Add onion and cook 2–3 minutes. Stir in garlic and cook 30 seconds more.
  3. Add taco seasoning and ROTEL. Stir to combine.
  4. Pour in pasta and broth. Bring to a boil, then reduce heat. Cover and simmer 12–14 minutes until pasta is tender.
  5. Stir in cream cheese until melted. Add shredded cheddar and mix until creamy.
  6. Serve hot with toppings of choice.

Notes

  • Use HOT ROTEL for more spice
  • Stir in black beans or corn for variety
  • Store leftovers up to 4 days in fridge
