12 oz rigatoni pasta
1 lb Italian sausage (sweet or spicy), casings removed
1 small yellow onion, diced
3 cloves garlic, minced
1 tbsp tomato paste (optional)
1 cup heavy cream
½ cup grated Parmesan cheese
1 tsp dried oregano or Italian seasoning
¼ tsp red pepper flakes (optional)
Salt & black pepper to taste
Fresh parsley or basil, for garnish
Instructions
Cook rigatoni in salted water until al dente. Reserve ½ cup pasta water, then drain.
In a skillet, cook sausage over medium heat until browned. Remove excess grease.
