A creamy shrimp pasta salad made with tender pasta, juicy shrimp, fresh vegetables, and a smooth lemon dressing, perfect for gatherings or meal prep.

Ingredients

12 ounces rotini or penne pasta
1 pound shrimp, peeled and deveined
1 cup mayonnaise
1/4 cup sour cream or plain Greek yogurt
2 tablespoons lemon juice
1 teaspoon Dijon mustard
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup celery, finely diced
1/2 cup red bell pepper, diced
1/3 cup red onion, finely chopped
1/2 cup cherry tomatoes, halved
2 tablespoons fresh parsley, chopped
1 tablespoon olive oil

Instructions

  1. Cook pasta in salted boiling water until firm yet tender, then drain and rinse under cold water.
  2. Cook shrimp in boiling water until opaque and pink, then cool quickly and drain.
  3. In a bowl, mix mayonnaise, sour cream, lemon juice, mustard, garlic, salt, and pepper until smooth.
  4. Add pasta and shrimp, then toss to coat evenly.
  5. Add celery, bell pepper, onion, and tomatoes.
  6. Fold in parsley and drizzle with olive oil.
  7. Chill before serving and stir again prior to serving.

Notes

Store in an airtight container in the refrigerator. If the salad thickens after chilling, mix in a small amount of dressing or lemon juice before serving to adjust consistency.
