Creamy Tomato Basil Chicken in the Slow Cooker features tender chicken simmered in a rich tomato cream sauce with garlic, basil, and Parmesan cheese.
1½ pounds boneless chicken breasts or thighs
1 can (28 oz) crushed tomatoes
1 cup chicken broth
1 cup heavy cream
1 small onion, diced
4 cloves garlic, minced
1 teaspoon dried basil
1 teaspoon Italian seasoning
½ cup grated Parmesan cheese
¾ teaspoon salt
½ teaspoon black pepper
1. Place chicken in the slow cooker.
2. Add diced onion and minced garlic.
3. Pour crushed tomatoes and chicken broth over the chicken.
4. Sprinkle basil, Italian seasoning, salt, and pepper.
5. Cover and cook on low for 6 hours or high for 3–4 hours.
6. Stir in heavy cream and Parmesan cheese during the final 30 minutes.
7. Shred or slice the chicken if desired.
8. Allow the sauce to thicken slightly before serving.
9. Taste and adjust seasoning if needed.
10. Serve over pasta, rice, or mashed potatoes.
