Seared salmon fillets simmered in a rich garlic cream sauce with sun-dried tomatoes, spinach, and Parmesan. A romantic, 30-minute meal perfect for Valentine’s Day.

Ingredients

4 salmon fillets (about 6 oz each)
1 tbsp olive oil
1 tbsp butter
2 garlic cloves, minced
⅓ cup chopped sun-dried tomatoes
1 cup heavy cream
½ cup grated Parmesan cheese
1 tsp Italian seasoning
2 cups baby spinach
Salt and pepper to taste
Fresh parsley or basil, for garnish

Instructions

  1. Pat salmon dry and season with salt and pepper.
  2. Sear in oil and butter over medium-high heat, 4–5 minutes per side. Remove and set aside.
  3. Sauté garlic, then sun-dried tomatoes.
  4. Add cream, Parmesan, and seasoning. Simmer until slightly thick.
  5. Stir in spinach and cook until wilted.
  6. Return salmon to the pan, spoon sauce over, and simmer 2–3 minutes.
  7. Garnish and serve hot.

Notes

Use coconut cream and vegan cheese for a dairy-free version. Serve with rice, pasta, or crusty bread.
