2–3 large yellow onions, thinly sliced
3 cloves garlic, minced
2 tbsp olive oil
¾ cup unsweetened plant milk
2 tbsp nutritional yeast
1 tsp lemon juice or apple cider vinegar
Salt and pepper, to taste
8 oz pasta of choice
Optional: fresh herbs, chili flakes, vegan parmesan
Instructions
Caramelize onions in olive oil over low heat for 35–45 minutes.
Add garlic and cook 5 minutes. Deglaze pan if needed.
Blend onions with plant milk, nutritional yeast, lemon juice, salt, and pepper.
Cook pasta and reserve ½ cup cooking water.
Toss pasta with onion sauce and reserved water until creamy.
