A healthy, creamy white chicken chili made with Greek yogurt, white beans, and green chiles. High in protein, low in calories, and full of flavor.

Ingredients

3 cups cooked shredded chicken
2 cans (15 oz) white beans, rinsed and drained
1 can (4 oz) diced green chiles
1 small onion, diced
2 garlic cloves, minced
3 cups low-sodium chicken broth
½ cup plain Greek yogurt
1½ tsp ground cumin
1 tsp dried oregano
½ tsp chili powder (optional)
½ tsp salt (adjust to taste)
Juice of ½ lime
1 tbsp olive oil
Optional: fresh cilantro, avocado, tortilla chips for topping

Instructions

  1. Heat oil in a pot over medium. Sauté onion 4–5 minutes, then add garlic.
  2. Stir in spices and toast for 30 seconds.
  3. Add broth and green chiles. Bring to a simmer.
  4. Add chicken and beans. Simmer uncovered for 10–15 minutes.
  5. Blend a portion for creaminess if desired.
  6. Reduce heat and stir in Greek yogurt.
  7. Add lime juice, adjust seasoning, and serve with toppings.

Notes

Do not boil after adding yogurt. Add extra veggies like spinach for a nutritional boost. Make ahead and reheat gently.
