Juicy grilled chicken skewers coated in ranch seasoning, garlic, and parmesan with a buttery finish.

Ingredients

1 1/2 pounds chicken breast or thighs, cubed
2 tablespoons olive oil
2 tablespoons ranch seasoning mix
3 cloves garlic, minced
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons melted butter
1/3 cup grated parmesan cheese
1 tablespoon chopped parsley
1 garlic clove, minced

Instructions

  1. Cut chicken into evenly sized cubes and place in a bowl.
  2. Toss chicken with olive oil, ranch seasoning, garlic, lemon juice, salt, and pepper.
  3. Marinate for 30 minutes in the refrigerator.
  4. Thread chicken pieces onto skewers.
  5. Grill over medium-high heat for about 10–12 minutes, turning occasionally.
  6. Brush skewers with melted butter mixed with parmesan and garlic during the final minutes of grilling.
  7. Remove from grill, rest briefly, and serve.

Notes

Metal skewers or soaked wooden skewers both work well. Add vegetables to the skewers for variety.
