Crockpot Chicken Potatoes: Creamy Garlic Parmesan Dinner

Tender slow-cooked chicken and baby potatoes in a rich garlic Parmesan butter sauce — a hearty, flavorful one-pot dinner made effortlessly in your crockpot.

Ingredients

  • 2 lbs boneless, skinless chicken thighs or breasts
  • lbs baby potatoes, halved
  • 4 cloves garlic, minced
  • ¼ cup unsalted butter, melted
  • ½ cup freshly grated Parmesan cheese
  • ½ cup low-sodium chicken broth
  • 1 tsp Italian seasoning
  • ½ tsp paprika (optional)
  • Salt & pepper, to taste
  • Fresh parsley and more Parmesan, for garnish

Instructions

  1. Season chicken with salt, pepper, and Italian seasoning. Optional: sear in skillet for 2–3 minutes per side.
  2. Place potatoes in bottom of crockpot. Lay chicken on top.
  3. In a bowl, mix garlic, melted butter, Parmesan, broth, paprika, and more seasoning. Pour over chicken and potatoes.
  4. Cover and cook on low for 6–7 hours or high for 3½–4 hours.
  5. Stir gently before serving. Garnish with parsley and more Parmesan.

Notes

  • Add spinach or green beans in the last hour of cooking.
  • Use cauliflower instead of potatoes for a low-carb version.
  • Store leftovers in the fridge for up to 4 days.
