2 lbs boneless, skinless chicken thighs or breasts
1½ lbs baby potatoes, halved
4 cloves garlic, minced
¼ cup unsalted butter, melted
½ cup freshly grated Parmesan cheese
½ cup low-sodium chicken broth
1 tsp Italian seasoning
½ tsp paprika (optional)
Salt & pepper, to taste
Fresh parsley and more Parmesan, for garnish
Instructions
Season chicken with salt, pepper, and Italian seasoning. Optional: sear in skillet for 2–3 minutes per side.
Place potatoes in bottom of crockpot. Lay chicken on top.
In a bowl, mix garlic, melted butter, Parmesan, broth, paprika, and more seasoning. Pour over chicken and potatoes.
Cover and cook on low for 6–7 hours or high for 3½–4 hours.
Stir gently before serving. Garnish with parsley and more Parmesan.
Notes
Add spinach or green beans in the last hour of cooking.
Use cauliflower instead of potatoes for a low-carb version.
