This Crockpot Chicken Tortellini is a creamy, comforting one-pot slow cooker meal made with tender shredded chicken, cheesy tortellini, and a rich garlic-Parmesan cream sauce.

  • 1.52 lbs boneless, skinless chicken breasts or thighs
  • 2 cups low-sodium chicken broth
  • 1 (8 oz) block cream cheese, cubed
  • 1 tsp Italian seasoning
  • 23 garlic cloves, minced
  • Salt & pepper to taste
  • 1 (10 oz) can Rotel or diced tomatoes (optional)
  • 1620 oz refrigerated or frozen cheese tortellini
  • 1 cup shredded mozzarella or Italian blend cheese
  • 2 cups fresh baby spinach (optional)

Instructions

  1. Add chicken, broth, cream cheese, garlic, seasoning, and tomatoes to the crockpot. Cook on LOW for 4–5 hours or HIGH for 2.5–3 hours.
  2. Shred the chicken and return to the crockpot.
  3. Stir in tortellini. Cook on HIGH for 15–25 minutes until tender.
  4. Add shredded cheese and spinach (if using). Cover for 2–3 minutes until melted and wilted.
  5. Serve hot, garnished with extra cheese or herbs.

Notes

Add more broth if sauce is too thick. Use full-fat cream cheese for the smoothest texture. Store leftovers in fridge up to 4 days.
