A creamy, fall-inspired slow cooker pasta made with butternut squash, cheddar, and warm spices — a cozy, family-friendly dish.

Ingredients

  • 3 cups butternut squash (peeled & cubed)
  • 2 cups vegetable broth
  • 1½ cups shredded sharp cheddar cheese
  • 4 oz cream cheese, softened
  • 1 tsp garlic powder
  • ½ tsp nutmeg
  • 1 tsp salt
  • 12 oz pasta shells
  • 1 cup milk
  • Black pepper, to taste

Instructions

  1. Add squash, broth, garlic powder, nutmeg, and salt to crockpot.
  2. Cook on LOW for 4–5 hours or until squash is tender.
  3. Blend squash mixture until smooth using an immersion blender or transfer to a blender.
  4. Stir in cream cheese and cheddar until melted.
  5. Add dry pasta and milk. Cook on HIGH for 20–30 minutes until pasta is tender.
  6. Stir, season, and serve warm.

Notes

  • Add sautéed kale or spinach for extra greens.
  • Use whole wheat pasta for added fiber.
